Roughly chop bacon and cook for a few mins in a large saucepan (or Chasseur cast iron pot if you have one)
Add splash olive oil or 20g butter
Add sliced onion and cook til soft
Add 2 tablespoons plain flour and stir for a minute
Add 1 litre of vegetable stock and stir til mixed well
Add peeled and cubed potatoes
Bring to boil and then reduce heat to a simmer
Simmer uncovered for 10 – 15mins (or until potato cubes are tender)
Stir in 300g sour cream just before serving – reheat without boiling.
Garnish with herbs and serve
