Not sure where this recipe came from…..but it has been a definite FAVE soup in our family for a long time.
We cook it regularly.
So very simple and DELISH !!
Rather than a pureed soup, this one has cubes of potatoes and bacon pieces which does make it much more filling.
Creamy Potato and Bacon Soup

Servings 4
Ingredients
- 4 rashes bacon
- 1 onion
- 4 medium potatoes
- 300 grams lite sour cream
- Parsley or coriander or both
Pantry Staples needed
- 20 grams butter or oil
- 2 tbsp plain flour
- 1 ltr vegetable stock
Instructions
- Roughly chop bacon and cook for a few mins in a large saucepan (or Chasseur cast iron pot if you have one)
- Add splash olive oil or 20g butter
- Add sliced onion and cook til soft
- Add 2 tablespoons plain flour and stir for a minute
- Add 1 litre of vegetable stock and stir til mixed well
- Add peeled and cubed potatoes
- Bring to boil and then reduce heat to a simmer
- Simmer uncovered for 10 – 15mins (or until potato cubes are tender)
- Stir in 300g sour cream just before serving – reheat without boiling.
- Garnish with herbs and serve
Serving Ideas
- Break apart a big crusty loaf of bread and ENJOY this chunky, creamy soup!!
